Cabernet Sauvignon

Cabernet Sauvignon is a bit of an adventure this far north. Not every Finger Lakes vintage is going to give it what it wants, which makes the successful ones all the more interesting. Here the grape tends toward cassis, herbs, earth and firm structure rather than massive fruit and alcohol. It’s Cabernet Sauvignon with a distinctly northern accent—and an interesting record of what a particular growing season allowed us to do.
