Pinot Noir doesn’t make anything easy. It’s demanding in the vineyard, transparent in the cellar and quite willing to show you exactly what kind of vintage you had. That’s also what makes it interesting. In the Finger Lakes we look for cherry fruit, earth, spice and delicacy rather than power. When everything comes together, there’s remarkably little you need—or want—to add.
