2013 Laboratory Series Riesling Essence
The laboratory series is an 'experimental' series, in which we hope to capture the natural essence of the grapes. Typically we make three of these wines every few years: Merlot, Riesling and Gewurztraminer; and occasionally we also make small batch port-style wine under the Laboratory Series Label. Unlike more traditional wines these are made to help experience the grapes as they come out of the vineyard. When we crush the grapes we go through the normal process of crushing and cold soaking before pressing. The juice is then allowed to go through just a tiny bit of fermentation before we halt the fermentation process and then fortify the juice with distilled grape spirits. The fermentation process changes the taste of the grapes rather significantly (as you would expect) and by not allowing for the full fermentation, these wines hold more of the natural sugars of the grapes and the flavor of how they come out of the vineyard.
This Riesling is sweet and delicious, a great example of what Riesling tastes like when it comes out of the vineyard.
