The most exciting element of what we can hope achieve in this evolution is to express and influence the development of wines and of cuisine—together. Our chef's cuisine delivers the excitement not with complex, intricate recipes, but rather through straightforward, sincere preparations that focus on fresh and local inspiration. Meet Brud Holland, Red Newt Bistro's Executive Chef
The Bistro at Red Newt Cellars welcomes a new member to our innovative culinary team. We are pleased to introduce Brud Holland as Red Newt Bistro's Executive Chef.
Brud has been a friend to the Whitings for over twenty years, pals with David from their high school years and a mentor to Debra when Red Newt Cellars was but a seed in its infancy. “You call on your friends when you need them and that is the reason I'm here,” said Holland. “Debra and I shared the same passions and philosophies both inside the kitchen, and in our everyday lives as well, which will make it effortless to keep her spirit alive.” Finger Lakes Restaurant of the Year: Red Newt Bistro We can all agree that dreams are strange things. There is no controlling the content and there is often no explaining For that I blame (or perhaps thank) the dynamic Deb Whiting, chef and co-owner of Red Newt Bistro on the southeast side of Seneca Lake. The bistro is our Finger Lakes Restaurant of the Year. Beyond the ravioli - and really, do you need another reason? - here is a list of reasons that we selected this outstanding restaurant for the honor. Stirring the Lees with James MolesworthDay 2 in the Finger Lakes: Red Newt Cellars and More
![]() No trip through the Finger Lakes is complete without a stop at Red Newt Bistro for dinner. Deb Whiting was always on hand to greet patrons and she was a very hands-on chef in the kitchen. Her menu changed often as it relied heavily on local ingredients (the list of area farms she sourced from was always listed on the bottom of the menu). Her latest, and last, menu just hit the floor this week and her characteristic stamp is all over it. Her signature dish was arguably her ravioli, which always combined sweet and savory elements. Currently, it's garlic and ricotta with blueberry. The savory elements melt in your mouth first for a mouthwatering start, then the blueberries, always whole and perfectly ripe, pop, evoking a caviar experience and leaving you with a lingering sweet yet fresh and racy feel. She will be sorely missed for sure, but kudos to the Red Newt team for keeping their chins up as they move forward. Click here to read entire article! RED NEWT BISTRO'S DEBRA WHITING DIES IN TRAGIC CAR ACCIDENTHECTOR, NEW YORK – August 15, 2011 – Debra Whiting, Executive Chef & Co-Owner of Red Newt Cellars Winery & Bistro, was killed in a car accident on June 30th, 2011 while returning home to the Finger Lakes with her husband after a visit to Vermont. David Whiting, husband and winemaker at Red Newt Cellars, was also involved in the crash but did not suffer any serious injuries.
Debra was truly a passionate and inspirational culinary ambassador to the Finger Lakes region. As a member on the executive board of the Finger Lakes Culinary Bounty, she took great pride in utilizing locally sourced ingredients for her ever-changing menu and building relationships with the local farmers and producers of the region. Unhampered by formal culinary training, her approach was to seek an expressive interpretation to every culinary challenge. The result was a culinary palate whose colors express Debra's devotion to the bounty and seasons of the Finger Lakes. A native of Georgia and raised in Connecticut, Debra spent the first 15 years of her professional career in immunology research. She was an avid runner, competing in two New York City marathons in 1988 and 1989. Debra and her husband also took great pleasure in ballroom dancing. She is survived by husband David and two sons Ryan and Brenton. The Debra Whiting Foundation has been formed in Debra's honor to carry on her vision and commitment to wine, food, farms, families and community. Currently, the Debra Whiting Foundation is pending approcal for a 501C3 non-profit status. For the latest news on organization status and develoment of programs, please sign up for our mailing list. The Whiting and Red Newt family extend their deepest gratitude to those who have offered their support and condolences during this tragic time. The tremendous amount of love and strength goes beyond words. Red Newt Cellars is located on the east side of Seneca Lake in the hamlet of Hector in the Finger Lakes region of New York. In addition to producing wines from east Seneca Lake vineyards, Red Newt Cellars offers innovative Finger Lakes cuisine in the Bistro by utilizing locally sourced ingredients and promoting culinary relationships between farms and restaurants. Red Newt Cellars will remain a representation of the achievements of David and Debra's longtime goal to combine their efforts and expertise in the exploration of producing, and also in creating a synergy between, regional wine and cuisine.
